Signature Dish Dinner 2010

One of Sydney’s leading chefs, Serge Dansereau from the Bathers’ Pavilion at Balmoral Beach, will prepare a special Mid North Coast Signature Dish Dinner saluting the talent and produce of our region at Rydges Port Macquarie on Friday, September 10.

Winner of the 2010 Mid North Coast Signature Dish Competition will be presented their prizes at the $100 a head, four course dinner prepared by Serge alongside the Rydges team led by Executive Chef, Michael Schubert.

Serge is special guest judge for the 3rd Annual Mid North Coast Tourism Signature Dish Competition Finals to be held at the North Coast Institute of TAFE, Port Macquarie Campus, the day before on Thursday, September 9.

Mid North Coast Signature Dish Awards 2009

Glenn Thompson from Zest Restaurant in Port Stephens has won the Mid North Coast Tourism 2009 Signature Dish Competition for the second consecutive year with his “Balantine of Farmed Macleay Rabbit wrapped in Prosciutto with Pickled Eschallots, Black Olive Paint and Sauce Aigre Doux matched with a Cassegrain Edition Noir 2008 Pinot Noir.”

He displayed his winning style to special guest judge, Serge Dansereau from the Bathers’ Pavilion at Sydney’s Balmoral Beach, and fellow judges John Cassegrain from Cassegrain Wines and North Coast Institute of TAFE Port Macquarie based senior cooking teachers, Matthew Armstrong and David Baker.

“The winning dish was as good as any of the best restaurants in Sydney,” said Dansereau.

“Glenn’s skills, his use of fresh local product, the presentation and taste were all top quality.”

Dansereau also noted the camaraderie and professional support among mid north coast producers, chefs and the tourism industry.

Mid North Coast Signature Dish finalists announced

A major “Cook-Off” to find the 2009 winner of the 2nd Annual Mid North Coast Signature Dish Competition will be held at the North Coast Institute of TAFE, Port Macquarie Campus on Wednesday September 9.

A judging panel of four this week selected the 12 finalists for this popular competition which has attracted entries from Port Stephens in the south to Coffs Coast in the north.

“We are delighted with the quality of the entries, the skills and beautiful use of fresh local produce,” said Mid North Coast Regional Tourism Organisation Executive Officer, Ms Belinda Novicky.

Serge Dansereau to judge Signature Dish Awards

Internationally renowned chef and author, Serge Dansereau, is set to visit the Mid North Coast NSW in September to judge the MNCRTO 2nd Annual Signature Dish Competition.

Dansereau, owner of The Bather’s Pavilion restaurant, café and function centre overlooking Sydney’s Balmoral Beach will join leading local wine maker, John Cassegrain and North Coast Institute of TAFE, Port Macquarie Campus Head Cooking Teacher, Matthew Armstrong to judge this popular competition on September 9.

Cookery students, local chefs and foodies can also enjoy Dansereau’s extensive experience at a presentation to be held at the Port Macquarie TAFE campus on September 8 when he will discuss his culinary career, philosophies and travels.

2009 MID-NORTH COAST SIGNATURE DISH

Knives will be drawn, and competition whipped up for the 2nd Annual Mid North Coast NSW Signature Dish Competition launched in Port Macquarie today.

Chefs from Port Stephens in the south to Coffs Coast in the north are invited to enter this 2nd Annual Signature Dish Award, focusing on the region’s local produce, top chefs and regional cuisine.

“Annually, the MNCRTO is looking for a winning dish that exudes the tastes and personality of our region – one that will long be remembered and associated with the character of the mid north coast,” said MNCRTO Executive Officer, Ms Belinda Novicky.

Entrants are asked to create a main course, either hot or cold, with the main ingredient being locally produced meat, poultry, game or seafood accompanied with two other locally produced components. The dish should also be matched with a local wine.
